CHOCOLATE GRAVY AND BISCUITS
For the biscuits:
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon fine sea salt
4 tablespoons (1/2 stick) cold unsalted butter, cut into bits and chilled
¾ to 1 cup buttermilk
For the gravy:
¾ cup sugar
3 tablespoons all-purpose flour
¼ cup cocoa powder
2 cups whole milk (full cream milk/any milk)
4 tablespoons (1/2 stick) unsalted butter
FOR THE BISCUITS:
Preheat the oven to 260°C (or 500°F)
Greased an 8″ round cake pan with butter or nonstick spray. Set aside.
In a mixing bowl, add 2 cups of the flour, baking powder and salt. Slice the butter and mix it into the flour mixture until it becomes lumpy or coarse in texture.
Slowly add in the buttermilk and mix until just combined; adjust the buttermilk if needed so that the dough is very wet and looks like cottage cheese. (add little by little)
Add the remaining 1 cup flour in another shallow bowl. Use medium ice-cream scoop or large spoon (greased it with oil or use nonstick spray).
Start scooping up some biscuit dough and drop it into the flour. It makes about 8-10 dough. Roll the dough into the flour to coat. Shake off excess flour and form the dough into a round shape.
Transfer each dough into the prepared greased round pan. Arrange and press them snugly next to each other in the pan. (It will stay soft and tender this way).
Bake until golden brown for about 12-15 minutes. Once done, remove from oven and transfer to a wire rack to cool slightly.
Serve warm and enjoy with chocolate gravy!
FOR THE CHOCOLATE GRAVY:
In a saucepan (without heat yet), add the sugar, flour and cocoa and whisk it until no clumps of flour and cocoa remain. Pour in the milk and whisk well to combine.
Heat the saucepan over medium heat and cook, whisking continuously, until the mixture begins to boil. Adjust heat to low and continue whisking until the sauce thickens like gravy for about 5 to 10 minutes.
Turn off heat, remove from stove and whisk in the butter until it melts.
Spoon warm gravy over the warm biscuits and serve the remaining gravy in a small bowl. Enjoy!
