BEEF BINAKOL (NILAGANG BAKA SA BUKO)
INGREDIENTS:
1 kilogram beef, (short ribs)
2 medium potato, peeled and chopped
2 carrots, peeled and chopped
3 pcs string beans (sitaw), sliced
½ cabbage, sliced in chunks
1 onion, chopped
1 tbsp garlic, minced
2 stalks tanglad, tie in a knot
2 whole fresh coconut (buko), juice and buko meat
1 liter water, preferably beef bone broth (alternatively use beef broth cubes)
1 tbsp ground black pepper
2 tbsp vegetable oil
patis, to taste
INSTRUCTIONS:
Prepare the freshly crack coconut shells. Set aside the coconut juice and scrape the buko meat. Set it aside for later use.
In soup stock pot, sauté garlic in oil over medium-low heat. Add beef and sear until brownish in color.
Add beef broth/water and bring it to a boil. Simmer for about 2 hours or until beef becomes very tender. You may also use a pressure cooker and time it once it starts to whistle for about 30 minutes.
Once the beef is tender, add in tanglad, buko juice and buko meat. Continue to simmer for about 10 minutes. Season with patis and pepper to taste.
Lastly, add the chopped onions, carrots, potatoes, string beans and let simmer for additional 10 minutes. Once the carrots and potatoes are tender. Add in cabbage. Turn off heat and cover the stock pot. Let the residual heat cook the cabbage.
Serve it hot with Patis and calamansi dippings on the side. Enjoy!
