This Pancit Vigan recipe is also known as Pancit Musiko in Vigan Ilocos Sur. A traditional snack for Music Bands (mga musikero) in Vigan fiestas. Why not try this delectable recipe today, it’s super delicious even for breakfast.

Servings: 2



½ cup chicken breast (boiled and shredded)
½ cup pork shoulder or kasim (or cooked bagnet if available
3 cloves garlic, crushed
1 small onion, chopped
3 tbsp achuete oil
3 cups chicken stock/broth
2 cups ilocano miki
1 tsp patis (fish sauce)
¼ tsp pepper
1 tbsp margarine/cooking oil
ilocos chicharon, garnish (optional)
2 stalks spring onions
2 hard boiled eggs


1. In a medium pot, heat margarine to sauté garlic until brown and fragrant. Add in onions and cook until soft.

2.  Toss in pork and sauté until lightly brown and own fat has rendered. Pour in atchuete oil and chicken. Continue to cook for about  3 minutes.

3.  Pour in chicken stock and let it come to a boil. Then, add-in the miki noodles. Adjust heat to low and let it simmer. Continue to cook until the noodles becomes tender. Once the soup becomes thick, season to taste with patis and pepper. Do not put too much because the miki noodles are already salty.

4.  Serve in 2 individual bowls, garnish with chopped green onions and fried garlic, ilocos chicharon and boiled eggs. Enjoy!
