KANGKONG SALAD

Kangkong Salad, Sinangag, Sunny Side Up egg at Tinapa! What a perfect Filipino meal. Ang sarap at nakakagutom naman talaga. Happy cooking!

KANGKONG SALAD

(RIVER SPINACH SALAD)

INGREDIENTS:

1 bundle Kangkong or River Spinach  
4 fresh tomatoes, chopped
1 medium red onions, chopped
1 Salted egg, chopped (optional
boiled hot water (for blanching kangkong)

Dressing:    
½ cup vinegar   
1 small head of garlic (finely minced)    
¼ teaspoon sugar   
a pinch of salt    
¼ teaspoon black pepper (freshly grounded)

INSTRUCTIONS:

Clean the Kangkong thoroughly in running water and remove dirt residue. Remove the leaves then wash it again. You can add some of the stems if you prefer.

In a large bowl, pour in hot water and blanch Kangkong leaves. Set aside for a rew minutes and drain water.

In a large platter, arrange kangkong.

Top with chopped tomatoes, onions and salted eggs.

In a small bowl, combine vinegar, minced garlic, Sugar salt and black pepper.

Serve kangkong with vinegar dressing.
