Kaldereta and Adobo flavor in one menu. I was curious at first on how it will turn out. But lo and behold, it taste super rich and tasty. Malasa po sya at super sarap naman talaga. Simple and so easy to cook!
So why not try ang favorite ng mga kalbo, Kaldobo! You can also use beef if you like and cooking of meat may take about 2hrs. While pork takes about 40 minutes to cook.
PORK RIBS KALDOBO
INGREDIENTS:
½ kilong pork ribs/tadyang ng baboy
½ kilong pork meat (laman ng baboy)
1 can liver spread
1 cup pineapple juice (8oz)
1/2 cup tomato sauce (115g)
2 tablespoon pickle relish
2 tablespoon mantikilya
5 tablespoon Mama Sita’s oyster sauce
½ cup toyo
½ tablespoon pepper powder
6 cloves garlic, divided
2 small onion, chopped and divided
1 potato, peeled and chopped
3 bay leaves (dahon ng laurel)
grated cheese, garnish
INSTRUCTIONS:
In a bowl, marinate pork in soy sauce, garlic, onions, pepper, butter, 2 tbsp tomato sauce and pickle relish. Mix it well and marinade for 1-2 hours. Set aside remaining tomato sauce.
In a large pan, saute the second half of garlic and onion in heated oil until fragrant.
Add in the pork ribs and meat and set aside the marinating sauce. Stir fry pork until lightly brown for about 3-5 minutes.
Add in the marinade sauce, oyster sauce, and liver spread. After 1 minute pour in the pineapple juice. Bring it to a boil and let simmer for 15 minutes. Stir it every once in awhile to make sure the liver spread will not scorch at the bottom.
After 15 minutes, add in the remaining tomato sauce, bay leaves and chopped potatoes. Continue to simmer over low heat and constantly stirring. Let it cook until the sauce is thickened and the pork is cooked through about 15-20 minutes.
Season with salt and pepper. Sprinkle grated cheese on top and turn off heat. Ready to serve. Enjoy!
Tagalog Version:
Sa isang mangkok, ibabad ang baboy sa pinaghalong toyo, bawang, sibuyas, paminta, tomato sauce, mantikilya at pickles sa loob ng isa hanggang dalawang oras. Isantabi muna ang natirang tomato sauce.
Sa isang kawali, igisa ang bawang at sibuyas saka ilagay ang ibinabad na karne. (Ihiwalay ang marinade sauce at isantabi muna). Igisa ang pork ribs at laman hanggang ito ay mag brown ng kaunti for 3-5 minutes.
Isunod naman idagdag ang naiwang marinade sauce, oyster sauce at liver spread. Ibuhos ang pineapple juice pagkaraan ng isang minuto. Pakuluin ang sabaw sa mataas na apoy at hayaan ito na kumulo sa mahinang apoy sa loob ng 15 minutes. Haluin lamang ng haluin upang hindi masunog sa ilalim ang liver spread.
Idagdag naman ang natirang tomato sauce, patatas at dahon ng laurel. Ipagpatuloy ang pagpapakulo at haluin lamang ng haluin.
Pakuluan sa mahinang apoy sa loob ng karagdagang 15-20 minutes, hanggang sa lumambot ang karne at lumapot na ang sauce.
Timplahan ng asin at paminta. Budburan ng ginadgad ng keso at patayin ang apoy.
