Leche Puto For Business

Are you planning to add more variety to your kakanin pa-order business. This is the recipe your looking for. 50 pieces recipe of medium size Leche Puto, use a large steamer in 3 layers to cook this in just 1 batch.

Yield: 50 pcs (medium size puto cups)



  • Puto batter:
  • 2 cups cake flour/all purpose flour
  • 2 tbsp baking powder
  • ½ cup white sugar
  • ¼ tsp iodized salt
  • ¼ cup evap/fresh milk
  • 1 ¼ cups water
  • ½ tsp vanilla
  • Meringue:
  • 3 egg whites
  • ½ cup white sugar
  • ¼ tsp cream of tartar
  • For Leche flan:
  • 5 egg yolks
  • 1 whole egg
  • 1 big can condensed
  • ½ cup evaporated milk (alaska evap red label)
  • ¼ tsp calamansi extract


  1. For Leche flan: In a small bowl, mix thoroughly together the eggs, condensed milk, evaporated milk and calamansi extract.
  2. Pour about ¼ egg mixture into plastic molds.
  3. Cover steamer and steam on low heat for about 8 minutes. Remove from steamer and let cool before adding the puto batter.
  4. For puto: In a bowl, beat egg whites, cream of tartar until soft peaks form. Gradually add sugar and add milk little by little while comtinue beating. Use a hand mixer, beat until mixture is fluffy and soft peaks form.
  5. In a separate bowl combine flour, baking powder, water and salt. Keep stirring until completely combined but do not over mix.
  6. Add the meringue and fold it together until well combined. Use a spatula and fold the fluffy meringue carefully into the batter.
  7. Use spoon and scoop mixture, and pour over flan filling ¾ to the top.
  8. Cover steamer with cheesecloth and steam on low heat for another 10 minutes.
  9. Remove from steamer, let it cool first before turning it over. Enjoy!
