LECHE PUTO FOR BUSINESS
INGREDIENTS:
- Puto batter:
- 2 cups cake flour/all purpose flour
- 2 tbsp baking powder
- ½ cup white sugar
- ¼ tsp iodized salt
- ¼ cup evap/fresh milk
- 1 ¼ cups water
- ½ tsp vanilla
- Meringue:
- 3 egg whites
- ½ cup white sugar
- ¼ tsp cream of tartar
- For Leche flan:
- 5 egg yolks
- 1 whole egg
- 1 big can condensed
- ½ cup evaporated milk (alaska evap red label)
- ¼ tsp calamansi extract
INSTRUCTIONS:
- For Leche flan: In a small bowl, mix thoroughly together the eggs, condensed milk, evaporated milk and calamansi extract.
- Pour about ¼ egg mixture into plastic molds.
- Cover steamer and steam on low heat for about 8 minutes. Remove from steamer and let cool before adding the puto batter.
- For puto: In a bowl, beat egg whites, cream of tartar until soft peaks form. Gradually add sugar and add milk little by little while comtinue beating. Use a hand mixer, beat until mixture is fluffy and soft peaks form.
- In a separate bowl combine flour, baking powder, water and salt. Keep stirring until completely combined but do not over mix.
- Add the meringue and fold it together until well combined. Use a spatula and fold the fluffy meringue carefully into the batter.
- Use spoon and scoop mixture, and pour over flan filling ¾ to the top.
- Cover steamer with cheesecloth and steam on low heat for another 10 minutes.
- Remove from steamer, let it cool first before turning it over. Enjoy!
