These Strawberry and Cream Eclairs is simply a classic recipe. Easy and delicious way to start baking eclairs. In fact, there are so many ways you can play with Eclairs, just like any donuts.
You can garnish it with Chocolate, caramel, or any frostings you love to use in cupcakes. You can add Bavarian filling. You can also make it colorful and tempting with melted chocolate and sprinkles. So I hope you enjoy this recipe and happy baking!
Strawberry and Cream Eclairs
⅓ cup water
⅓ cup milk
5 ½ unsalted butter (72grams)
¾ teaspoon caster sugar (finer/grounded regular sugar)
½ teaspoon salt
¾ cup bread flour
3 medium eggs, beaten
300ml whipped cream*
Powdered sugar, garnish
Tools: 1 Piping bag for whipped cream and 1 piping bag for the Eclair batter with star tips.
*Cook Notes: Alternatively, you may also use Whip It or Frosty Boy whipping powder available in baking stores or Lazada or Shopee. Follow package instructions to turn it into whipped cream.
Preheat oven at 200°C.
Line a baking tray with greased wax paper.
In a saucepan, pour-in milk, water, salt, butter, and sugar. Combine well and bring it to a boil over medium to high heat.
Remove from the heat, add bread flour. Use a wooden spoon and beat the flour for 2 minutes until well mixed.
Transfer to a mixing bowl and use an electric hand mixer. Beat on medium speed until mixture cools down. Let it cool completely and set aside.
Add eggs in 3 batches, and keep beating until you have a smooth and glossy dough.
Transfer mixture into a large piping bag with star tip and pipe out your Eclairs in oval shape, leave space for them to rise. Freeze for an hour.
Bake Eclairs in the oven and reduce the temperature to 160°C.
Bake for 20-30 minutes or until slightly brownish but not toasted. Remove from the oven and let it cool completely.
Slice each oval in half and place chopped little strawberries or strawberry jam in the center. (When you slice it, there will be a little hole in the center where you can insert the filling).
Pipe cream on top of the filling and place the 2nd half of eclair. Sprinkle the tops with powdered sugar.
Decorate with more cream and strawberry pieces according to your taste and style. Enjoy!
