CHICKEN AND BACON RANCH PASTA
This Chicken and Bacon Ranch Pasta is a must try recipe you can try for the Holiday season. I must say the bacon.. made it really good. But the chicken is extra ordinary yummy! Discover the secret ingredient I added to make it yummy.
Some of you might be asking, where to buy the Ranch Sauce. You can find it in SM supermarket along the isles of Salad dressings. or buy it online for cash on delivery. Happy cooking!

CHICKEN AND BACON RANCH PASTA 

INGREDIENTS:

450 grams Penne Rigate pasta (or any pasta)
8 strips of smoked bacon, diced (or more)
4 tbsp all-purpose flour
2 cups milk
4 tbsp butter
2 cups ranch dressing (I used Wishbone brand)
½ kilogram boneless skinless chicken breasts (cut into small cubes)
1 cup shredded cheese  (cheddar or processed cheese)
1 tablespoon italian seasoning (alternatively dried basil or parsley or thyme)
Salt and pepper

INSTRUCTIONS:

Cook your rigatoni pasta according to package instructions. It took me 13 minutes to cook it. Drain water and set it aside.

In a pan, fry your chicken cubes first. Season it with salt and pepper. (I added 1 tbsp rice wine to make it more delicious and this is just optional). Let it cook for about 10 minutes. Drain from oil and transfer to a bowl and set it aside.

Next, fry the bacon and drain the oil but leave 1 tablespoon of bacon drippings in the pan. You may actually cook the whole package, its better with more bacon I suggest. Transfer the fried bacon into a dish and let it cool for slicing into small cubes. Divide it into two portion, the other portion will be for garnishing.

For the bechamel/roux: In the same pan, melt 4 tablespoon of butter to the bacon drippings and add flour. Stir it and let the flour cook. It will become lumpy in texture.

Add 2 cups of fresh milk, whisk and let it simmer over low heat. Once it becomes bubbly and thick, add in the ranch dressing, grated cheese, italian seasoning and some parmesan cheese (I have extra parmesan, its not required). Season with salt and pepper.

Mix it well and add in chicken cubes and half of the cubed bacon. Stir it well and let it cook for a minute or two. Turn off heat once you achieve the sauce consistency.

Pour sauce into the pasta and toss it well. Sprinkle remaining bacon bits and pieces. Garnish with extra italian seasoning and grated cheese on top.
