This coming Christmas, why not prepare something that can warm the heart and something healthy for the family.

This Cheesy Cauliflower Soup is best to serve hot with your favorite toppings, like a dollop of cream on top, chopped bacon and some spring onions or any fresh herbs you like for some added aroma to the soup. Don’t forget the toasted bread on the side. Just perfect! Happy cooking..

CHEESY CAULIFLOWER SOUP

INGREDIENTS: 

  • 1 cauliflower, chopped (about a cup)
  • ¾ cups water
  • 2 potatoes, cubed
  • 3 stalks celery, finely chopped
  • 1 small carrot, diced
  • 1 onion, chopped
  • 1/4 cup butter 
  • 1/4 cup all-purpose flour 
  • 3 cups milk 
  • 1 cup cheddar cheese, grated
  • salt and pepper to taste 
  • Add ons:
  • 1-2 tbsp Cream, toppings
  • 2 strips bacon, fried and chopped
  • 2 tbsp chopped green onions (optional garnish)
  • 4 slices of toasted bread, (on the side)

INSTRUCTIONS:

  1. In a soup pot, add ¾ cups water, chopped cauliflower, celery, carrots, potatoes and onions. Bring it to a boil for about 8-10 minutes until it becomes tender. Set aside.
  2. In another pan, melt butter over medium heat. Add and whisk in flour and cook it for 2 minutes over medium heat. 
  3. Remove pan from heat, and slowly add in milk while stirring. Place the pan in heat and let it simmer until sauce becomes thick. 
  4. Add in the vegetables with the thickened sauce. Keep stirring and season with salt and pepper to taste. 
  5. Sprinkle cheese and cook until melted. Turn off heat.
