Other Options: You may also try this recipe with sayote and sweet corn in husk instead of plantain banana. And if pechay baguio is not available, pechay or cabbage is a good alternative too.
Linat-ang Baboy of Cebu
INGREDIENTS:
1 kilogram pork (kasim or with buto-buto)
1 onion, chopped
3 pcs tanglad (or lemongrass)
1 medium gabi or taro, peeled and chopped
5 pcs string beans (sitaw), chopped
¼ squash (chopped)
1 inch ginger, peeled and chopped (luya)
1 bundle pechay baguio
spring onions, chopped
salt and whole pepper corns
2 saging na saba (plantain banana), peeled and sliced
water/hugas bigas
INSTRUCTIONS:
1. In a large pot, add enough water to boil pork, onions, ginger, lemongrass and taro. Bring it to a boil and just let it simmer until pork becomes tender for about an hour.
2. When the pork is tender, add in banana, squash. Let it cook until it becomes tender.
3. Once cooked, add in the string beans, spring onions and pechay baguio.
4 Season with salt and pepper to taste.
5. Cover pot and turn off heat. Serve and enjoy!
