Bangus Hamonado
INGREDIENTS:
2 medium Boneless daing na bangus
4 cloves garlic, crushed
½ cup sprite/7-up
½ cup Pineapple juice
2 tbsp Brown sugar
½ cup soy sauce
3 pcs Star anise
1 bay leaf (Dahon ng laurel)
whole peppercorns
1 tbsp tomato paste
1 can pineapple rings
2 tbsp cornstarch (dissolved in cold water)
1 bundle pechay/bokchoy (blanched)
3 tbsp Atsuete oil
cherries, optional garnish
INSTRUCTIONS:
1. In a wide bowl, combine soy sauce, sprite, pineapple juice, brown sugar, star anise, bay leaf, pepper and garlic. Let it marinate for 30 minutes. Set aside.
2. Drain bangus from the marinade and reserve the sauce for later use. Fry each bangus in a non stick pan until golden brown and crisp. Drain from oil and transfer into a serving platter. Set it aside.
3. In another sauce pan, pour in the reserve marinade sauce and let it simmer. Add 1 tbsp tomato paste and pour in cornstarch slurry. Stir and let it simmer until sauce is thickened.
4. Once the sauce becomes thick and glazy assemble the bangus plate and pour in the sauce on top of bangus. Top it with pineapple rings, cherry and add the blanch pechay on the side. Lastly, garnish atsuete oil on top.
Serve and enjoy!
