
Easy and authentic recipe of Mexican rice. The perfect way to spice up any meal. I’ve been craving for this rice ever since I tried this at a maxican restaurant here in the metro. I’m sure you will love this simple mexican rice recipe.
You can make this in so many variations. You can add chicken and veggies if you like. Others will also add more spice like a teaspoon of cumin, oregano, annatto powder and paprika.

Mexican Rice Recipe
INGREDIENTS:
2 cups rice grain (raw/hilaw)
2-3 tbsp oil
1 tsp salt
2 cups water
1 cup tomato sauce (8oz), La Costena or any brand will do
1 chicken broth cube
2 tomatoes, chopped
1 onion, minced
2 cloves garlic, minced
1 cup mixed veggies, minced (optional: like corn, carrots, peas, bell pepper etc.)
spring onions, (for garnish)
INSTRUCTIONS:
In a small pan, saute garlic and onions in oil until soft and fragrant. Drain from oil and set it aside. (Alternatively you may use onion powder and garlic powder too, so no need to saute).
In a deep large pan at a fairly high heat add oil. Fry the raw rice grain until golden brown color. It normally takes about 3-5 minutes until fully golden brown.
Then add sauteed onions, garlic, tomato sauce, salt, water, chicken broth powder, and veggies. Put a lid on and turn the heat down to as LOW as possible. (Like your cooking regular rice).
After 10 minutes check your rice it usually takes about 15-20 minutes to fully cook.
