What is the difference between say a regular cheesecake and the New York Cheesecake? This New York cheesecake recipe is crustless and baked in the oven. It has rich, dense, smooth, and creamy consistency that melts in the mouth. While, the regular cheesecake is a no-bake cake. It is white, light and airy in taste. You gotta try this recipe today.. it’s perfect!
This an authentic recipe of the classic american New York Cheesecake adapted from Chicago Tribune, an archive recipe credited to Mrs. Charles B. Goldman, of Auburn, N.Y.

New York Cheesecake (Crustless)

Prep: 20 minutes
Cook: 1 hour
Rest: 2 hours
Chill: 2 hours
Makes: 8 servings

INGREDIENTS:

2 eggs
1 package (7 ½ ounces) ricotta cheese (or farmers cheese), cubed, room temperature
1 package (8 ounces) cream cheese, cubed (room temperature)
1 cup sour cream
1 cup sugar
¼ cup flour
¼ cup melted butter
1 tablespoons lemon juice
½ teaspoon vanilla

INSTRUCTIONS:

1. Heat oven to 325°F or 160°C. In a mixing bowl using a hand mixer, blend together all ingredients (or use a food processor alternatively) until smooth. 

2. Pour mixture into a greased 9-inch springform pan. Bake for about 1 hour. Do a toothpick test in the center if its cooked. 

3. Turn-off oven. Let the cheesecake stand in the oven for about 2 hours. Once cool, chill  in the fridge for about 2-3 hours.

4. Garnish with with Blueberry filling, or any fresh fruits or chocolate drizzle. Serve and enjoy!
