Korean Spicy Braised Tofu (Dubu-Jorim)

Korean Spicy Braised Tofu or also known as Dubu-jurum is a popular Korean side dish (banchan). The tofu is basically pan fried and then braised in a delicious korean sweet and spicy sauce mixture.

Makes 3-4 servings

Korean Spicy Braised Tofu 

(Dubu-Jorim) 

INGREDIENTS:

For the tofu:
330 grams medium firm tofu/tokwa
1 ½ tablespoon cornstarch (or potato starch)
2 tablespoon oil 
sesame seeds
spring onions, garnish

For the sauce:
3 tablespoons honey (or sugar/1T oligosaccharide)
2 tablespoons soy sauce
2 tablespoons gochujang (Korean red chilli paste)
1 tablespoon gochujaru (or korean red chili pepper flakes or red pepper powder) 
1 tablespoon rice vinegar (or apple cider vinegar)
½ tablespoon sesame oil
½ teaspoon ground garlic
¼ teaspoon white pepper
½ tablespoon spring onion, chopped

INSTRUCTIONS:

1. PREPARE TOFU:
Remove excess moisture of tofu, wrap it up with clean kitchen towels and press it lightly to absorb excess moist. Place a heavy plate on top and let it stand for 5 minutes. 

2. Slice the tofu into cubes. Add cornstarch into a bowl and roll tofu into cornstarch. Shake slightly and remove excess starch as needed. 

3. PREPARE SAUCE:
In a bowl, mix all the listed ingredients and stir well. Set aside. 

4. COOKING PROCESS:
In a nonstick large pan, heat oil and cook your tofu until all sides are nicely brown and crispy for about 5 minutes. Cook it in 2 batches if needed and don’t overcrowd the pan. Transfer tofu into a plate lined with paper towels to remove excess oil. 

5. In the same pan, add the prepared sauce followed by the fried tofu. Let it cook over low heat and frequently stir for around 5 minutes. Turn off heat. 

6. Sprinkle sesame seed and spring onions on top. Serve it as a side dish and enjoy!
