INGREDIENTS:
2-3 medium fresh tomatoes
½ onion
1 jalapeno, or siling haba alternatively (stem, ribs, seeds removed, more or less – depending on heat preference)
1 clove garlic
1 lime, juiced
½ cup cilantro/wansoy, chopped
pinch of dried oregano
pinch of cumin
salt and pepper, to taste

INSTRUCTIONS:
1 You may also use a blender or even mortar and pestle for grinding. Minced tomatoes, jalapeno and onions into a small bowl. Add remaining ingredients and mix well.
2 Chill for an hour.
3 Serve with chips or use as a topping to your main dish. Super yummy!

Cooking Tips: It is best when you grill first the tomatoes, garlic, onions and jalapeno to get that smoked flavor. You may roast it quickly in the higher part of your oven. Place onion and tomatoes, jalapeno on a baking sheet and place it in oven. Cook for about 5-10 minutes or until onions, tomatoes, garlic and jalapeno is wilted and slightly charred on the sides.
