Yakimeshi (Japanese Fried Rice)

Yakimeshi (Japanese Fried Rice)
Yakimeshi, which literally means “fried rice”, is another staple dish in Japan. It’s a rice dish that’s cooked using leftovers cold rice with eggs, veggies, meats or seafood. This is super yummy with all the Japanese seasoning!

Yakimeshi (Japanese Fried Rice)

INGREDIENTS:
1 Tablespoon vegetable oil
2 tbsp unsalted butter
½ cup shrimp, chopped
3 cloves garlic, minced
2 eggs, beaten
2 ¼ cup cold cooked rice, mashed it with clean hands and separate the grains
½ cup cubed ham
½ cup frozen peas and carrots
Black pepper to taste
Green onions, to garnish

Sauce:
3 Tablespoon soy sauce
1 Tablespoon mirin
1 Tablespoon oyster sauce
1 Tablespoon fish sauce
1 teaspoon sesame oil
1 teaspoon garlic powder
1 teaspoon chili powder (optional only/or sriracha sauce)
Juice of ¼ of a lime

INSTRUCTIONS:
1. In a bowl, mix all the sauce ingredients. Set aside.
2. In a pan, heat oil and butter over medium heat.
3. Sauté minced garlic until fragrant, add shrimp and cook for about 2-3 minutes. Add in the sauce mixture and toss until incorporated. Transfer into a bowl (remove from the wok). Set aside.
4. Using the same pan, cook the beaten eggs and fry them until done.
5. Then add rice and ham. Toss and turn to break up the rice. Keep tossing all the ingredients together and let it cook for a few minutes to toast the rice.
6. Add the frozen peas and carrots and let it cook for about 5 minutes.
7. Add back the shrimp, and toss everything well together until all ingredients are incorporated.
8. Garnish with spring onioms and serve hot.
