Fiddlehead Fern also known as Pako is an ideal diet if you want to lose weight. So how can it help us to lose weight? The rich fibers of pako, actually takes time to digest, therefore allows us to feel full and lose the craving to eat.
Pako leaves are not just delicious for salads and menu, but very nutritious too.
It contains B-vitamin complex, 40% of vitamin C, 72% of vitamin A, beta-carotene, 3% calcium, 8% magnesium, 10% potassium, 7% iron (base on an RDA of 100g).
It is very beneficial for people with diabetes, heart problems and anemic. Lastly, the beta-carotene of these fern leaves can help reduce risk of lung cancer by 40% and other several cancer according to experts. So having said that I am so amazed with these pako leaves. Whipping up some quick fresh pako salad from time to time is now more meaningful now that ee know how healthy it is for us. Enjoy!

Ensaladang Pako

INGREDIENTS:
2 cups paco leaves (Fiddlehead Fern)
2 kamatis, hiniwa
2 itlog maalat, sliced
patis, to taste
2 pcs calamansi, juiced
1 white onion, sliced

Dressing:
3 tablespoon of olive oil
pepper powder
1 tablespoon of apple cider vinegar (or any)

INSTRUCTIONS:
1. Magpakulo ng tubig. Kapag kumukulo na ay patayin ang apoy. Sa isang bowl, i-blanch at ilagay ang hinimay na paco. Hayaan itong maluto sa mainit na tubig sa loob ng 3-5 minuto
2. Kapag na half cook an ang gulay, maari mo na itong hanguin, salain at pigaan ng kalamansi para hindi mangitim ang pako.
3. Lagyan ng mga hiniwang kamatis, sibuyas na puti at itlog na maalat sa ibabaw.
4. Timplahan ng vinaigrette ang ensalada, i-drizzle and olive oil sa ibabaw, budburan ng kaunting pepper powder at 1 tablespoon vinegar. Haluin at i-toss ang salad.
5. Serve and enjoy!
