Crispy Fried Shrimp

INGREDIENTS:

  • ½ kilograms shrimp, peeled, deveined and the tails attached
  • ½ cup flour
  • 2 eggs lightly beaten
  • 1 ½ cups panko bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • vegetable oil or canola oil for frying
  • 1 lemon sliced, or 1 calamansi
  • cocktail sauce for dipping

INSTRUCTIONS:

  1. Clean the shrimp, remove the heads, shells, and leave the tails. Pat it dry using paper towels. Season shrimp with fresh squeezed lemon juice, salt, pepper and garlic powder. Set aside.
  2. Prepare three small bowls. In the first bowl, add 1/2 cup flour. In the second bowl, add 2 lightly beaten eggs. In the third bowl add 1 ½ cups panko bread crumbs.
  3. One by one dip the shrimp in flour, then egg, then panko bread crumbs. Use your hands and press the bread crumbs into each shrimp. Set aside.
  4. Using canola oil or Vegetable oil, heat about two inches of oil in a deep pan (about 350°F). Deep-fry the shrimp in batches until golden brown. Don’t overcook the shrimp or it will become rubbery. Use a slotted spoon and remove it from heat once golden brown. Transfer into a plate lined with paper placemat.
  5. Repeat the same procedure for the remaining batches. Serve with slices of fresh cucumbers and sweet chili sauce on the side.
  6. Enjoy!
