This Nigerian Jollof Rice is bursting in flavours, it’s spicy, smokey and so delicious. Best served with the famous Jamaican Jerk Chicken, coleslaw and fried plantain banana slices. I hope you enjoy a sumptuous weekend with your family. Happy cooking!
Naija Jollof Rice
INGREDIENTS:
6 cups Long grain rice, washed and parboil for 5-7 minutes
4 big bell peppers, roasted/charred & deseeded)
2 medium tomatoes
1 whole white onion, chopped
1 Scotch Bonnet pepper (optional or any red chili pepper)
1 whole red onion, chopped
½ cup of vegetable oil
7 tablespoon tomato puree (a tube/sachet or tin tomatoes)
3 Bay leaves
1 tablespoon of dried Thyme
3 broth/Stock cubes (knorr cubes)
2 tablespoons of All purpose seasoning (or any favorite seasoning)
2 teaspoons of nigerian curry powder (optional)
Salt (to taste)
INSTRUCTIONS:
Using a blender/food processor: Blend together the roasted peppers, tomatoes and white onion. Set aside.
In a pan, heat ½ cup of oil and sauté the red onions until soft and fragrant over medium heat
Add 7 tablespoons of concentrated tomato puree to the oil mixture and fry for about 5 minutes.
Then, add the blended mixture from step one. Season with all purpose seasoning, bay leaves, dried thyme, stock cubes and salt.
Stir and combine altogether; Bring to boil and cover pan, let simmer over medium heat for about 15 minutes.
Wash your already parboiled rice and drain until the water is clear. (This is to remove extra starch and help rice to cook better).
Once the sauce has cooked for 15 minutes, you may then add the washed rice, and combine well with the sauce.
Cover and let it cook over low heat, please remember to stir the rice every 20 minutes.
Let it cook for a total of 1 hour then let it stand with cover for an additional 10 minutes.
Best served with Roasted Jamaican Jerk Chicken, fried plantains and coleslaw.
How to Prepare Nigerian Fried Plantains:
Slice the peeled yellow plantains. Season it with salt and deep fry the plantain pieces until golden brown on both sides.
Remove it from oil and drain on paper towels. Serve it hot and enjoy!
