This spinach soup is so light and refreshing with a touch of cream. A simple healthy soup which is low in fat, and abundant in nutrients like Vitamin A, protein, magnesium, potassium, iron, fiber, and folate.
Spinach Soup Recipe
1 bunch Spinach, cleaned & roughly chopped
3 tablespoons Butter
1 white onion, chopped
4 cloves Garlic, minced
1/2 teaspoon black pepper powder
1 cup fresh Milk
2 tablespoons cream
1 tablespoon cream, for garnish
¾ cups water/broth
salt to taste
Over low heat, melt butter in a non-stick pan. Add onion and garlic and sauté for 1-2 minutes over medium heat until soft and fragrant.
Add spinach and sauté another few minutes. Let it cool and set aside.
In a blender, puree the mixture until fine in texture.
Add back the pureed spinach to the pan and heat. Season with salt, black pepper powder and add water.
Bring it to a boil, stir it well and let it cook for 2-3 minutes. Pour in milk and mix it well.
Adjust seasoning, mix and let it simmer for additional 2-3 minutes.
Add the cream and stir it well and cover the pan. Turn off heat.
Garnish with cream on top. Serve it with toasted garlic bread on the side. Serve it hot and enjoy!
