Camote Tops Salad is so delicious and healthy.. just lessen/omit the Bagoong isda if your health is not good with salty comdiments. You may substitute use of Pink Himalayan salt (good for people with high blood pressure).
Fresh Camote Top Leaves
Ensaladang Talbos Ng Kamote with Hilaw na Mangga
INGREDIENTS:
1 tali ng talbos ng kamote (Camote tops), remove from stems
2 medium tomato, chopped
1 medium unripe mango (hilaw na mangga),chopped
1 small onion, minced
1 Chili (labuyo)
2 pc Calamansi
3 tbsp Bagoong isda sauce
2 tbsp vinegar
slices of salted eggs
INSTRUCTIONS:
In a colander, wash Camote Top leaves in running water. Drain from water.
Peel unripe mango and cubed the flesh.
Chopped 2 medium tomatoes or in small cubes.
Then chopped onions and one small labuyo if you prefer a little spiciness.
Combine all ingredients, squeeze some calamansi juice, add bagoong isda sauce and vinegar. Mix it well.
Decorate and Garnish with slices of salted eggs on the side. Yummy!
