Russian Potato Salad Recipe

A famous 70’s throwback salad – The Classic Russian Potato Salad. This salad is enjoyed all over the world, specially in Europe. In Moscow, Famous Chef Lucien Olivier prepared a dish with poultry, veal and mayonnaise. In the middle of the dish were boiled potatoes, pickles and boiled eggs. The Chef noticed that the guests were mixing all of the ingredients while eating. So this salad is also known as “Salad Olivier”. Although, meat was not accessible in the old times, (as easy as it is now) the salad was simplified to just potatoes, eggs, carrots, onions, dill pickles, peas and mayonnaise. It became famous too as “European Potato Salad”. And in this modern day and age, adding some smoked ham, will make it really more delicious!

Russian Potato Salad Recipe

INGREDIENTS:

  • 5 medium yellow potatoes, boiled and diced
  • 2 medium carrots, boiled and diced
  • 1 yellow onion, diced
  • 1 cup frozen peas, steamed
  • 3 medium sized dill pickles, diced
  • ½ cup smoked ham, cubed
  • 6 hard boiled eggs, diced
  • 1 ½ cup mayonnaise 
  • 1 Teaspoon salt
  • ½  Teaspoon black pepper

INSTRUCTIONS:

  1. Cook Egg to hard boiled, dice and cook potato, dice and cook carrots and cool. Please dice it in similar size. It will look so delicious with uniform dice.
  2. In a mixing bowl, combine mayonnaise, salt and pepper and mix it well. Then start tossing all remaining ingredients. Chill for an hour and serve. 
  3. Use a round mold for a presentable serving size shape. Serve it on a plate with sliced hard boiled egg and garnish with Parsley on top.
  4. Serve and enjoy!

Cooking Tips: Alternatively, you can substitute some plain yogurt and reduce the amount of mayonnaise in the list. Instead of 1 ½ cup mayo, just make it 1 cup and add ½ cup yogurt to the mixture.
