Cheesy Fire Chicken (Korean Buldak)

Korean Buldak, or Fire Chicken is a spicy, tasty Korean breast chicken fillet served with lots of melted Mozzarella cheese on top. The word “Bul” in Korea means fire and the word “dak” in Korean means Chicken. Super easy to make, very spicy, cheesy and delicious!

Cheesy Fire Chicken Recipe (Korean Buldak)

INGREDIENTS:

  • 500 gram chicken breast fillet
  • 1 block mozzarella cheese, cut into small pieces (or lots of it)
  • 4 garlic cloves, minced
  • 4 tablespoon Gochugaru powder (hot pepper flakes)
  • 3-4 teaspoon Gochujang paste (hot pepper paste)
  • 2 teaspoon soy sauce
  • 2 tablespoon canola oil
  • ½ teaspoon ground black pepper
  • 2 tablespoon rice syrup (honey or pancake syrup or sugar syrup)
  • 150 ml water
  • Green onions, sliced in slanted

INSTRUCTIONS:

  1. Slice chicken breast fillet into cubes.
  2. Dice mozzarella cheese into smaller pieces.
  3. In a bowl, mix Gochugaru powder, Gochujang paste, soy sauce, canola oil, black pepper, rice syrup, minced garlic, stir it evenly until it becomes a red paste.
  4. Transfer the chicken into a medium bowl and mix it evenly with the red paste. Let it marinate for about 15 minutes.
  5. Preheat the oven to 200°C.
  6. Transfer the chicken in a cast iron pan and cook over medium-high heat. Add 150 ml water into the used bowl (where you marinated the chicken). Mix then pour it into the cast iron pan. Let it cook for about 10 minutes.
  7. Cover the pan, adjust heat to low heat and cook for 5 minutes more. Open the lid, cook it until the water evaporates or until the chicken is fully cooked.
  8. Turn off the heat, add lots cubed mozzarella cheese all over the top. 
  9. Broil it in the oven for about 5 minutes, until all cheese is melted on top.
  10. Remove and garnish with sliced green onions. Serve and enjoy!
