Greek Style Avocado Toast

Greek Style Avocado Toast

Servings: 2

INGREDIENTS:

  • 2 slices sourdough bread, toasted
  • 1 large avocados, pits removed
  • ½ of fresh lemon
  • ½ cup feta cheese, diced
  • ½ cup cherry tomatoes, diced
  • ¼ cup Black olives, sliced thinly
  • 1 teaspoon fresh herbs like dill or spring onions
  • pinch of red pepper flakes
  • Salt and pepper, to taste
  • Extra-virgin olive oil, for drizzling

INSTRUCTIONS:

  1. Slice the avocado in halves, remove the seed and pit. Slide the spoon underneath the flesh and skin to scoop out scallops of avocado flesh. Transfer into a bowl.
  2. Slice the avocado flesh and cut it in diced. Mashed it slightly. Squeeze some lemon juice. Season it with red pepper flakes, salt and pepper to taste.
  3. Adjust seasoning as needed by tasting, adding more lemon juice if desired.
  4. Place the avocado cubes onto the top of toast then top it with diced cherry tomatoes, some black olives, and fresh herbs. Drizzle with olive oil and serve it with feta cheese cubes on the side.
