Try this Pocherong Liempo using crispy lechon kawali or liempo.. You can use leftover crispy pork or cook lechon kawali by frying in a pot or bake it easy using an Air fryer or oven. This is so yummy!
Crispy Pocherong Liempo Recipe
INGREDIENTS:
½ kilo pork liempo (or lechon kawali leftover)
3 cloves garlic,minced
1 onion, chopped
½ cabbage, chopped in big chunks
1 small Carrot, chopped
1 potato, chopped
1 sweet plantain banana (saba)
1/2 cup Baguio beans, (removed tails and side strings)
1 Red bell pepper
1 can pork and beans
2 regular pack tomato sauce
2 tablespoon sugar
INSTRUCTIONS:
If using fresh pork, wash it first and boil it in a pot of water with salt and pepper until tender. Reserve pork broth.
Once pork is tender, remove from water and dry it up with paper towels, and prick the meat and fat with a fork. Set aside
In a deep pot, fry it in cooking oil and cover the pot to avoid oil splash. But if you have an air fryer, brush it with oil all over and bake at 200°C until crispy and golden brown. Chop it into serving sizes or dice.
In a pan, fry the potatoes and banana in hot oil until browned. Remove and transfer into a plate.
In the same pan, saute garlic and onions until fragrant. Then add in the tomato sauce and sugar. Let it simmer over low heat.
Add in all other veggies like Baguio beans and carrots and let it cook for about 2 minutes. Adjust with pork broth/water if needed.
Add in the fried potatoes, bananas and pork and beans. Then add the bell pepper and cabbage. Simmer and let it cook for a minute.
Lastly, adjust the taste with salt and pepper. Turn off heat, cover pan and let residual heat cook other vegetables.
Crispy Pocherong Liempo (Tagalog)
SANGKAP:
½ kilo ng baboy (lechon kawali leftover kung meron)
3 butil ng Bawang, tinadtad
1 Sibuyas, hiniwa
½ repolyo
1 Carrot
1 Patatas
1 Saging na saba
1/2 cup Baguio beans
1 Red bell pepper
1 lata pork and beans
1 pack tomato sauce
2 kutsarang asukal
PARAAN:
Hugasan nang maigi ang baboy at pakuluan sa tubig na may asin at paminta.
Kapag malambot na ang baboy, hanguin ito at tusuk-tusukin ang taba gamit ang tinidor. Itabi.
Iprito ito para maging lechong kawali. Or mas maigi kung gagamit ng oven or Air fryer sa 200°C at ihurno hanggang mamula. Kapag golden brown na ay hiwain ito sa maliliit na piraso.
Sa isang kawali, iggisa ang patatas at saging. Kapag namula-mula na, hanguin at itabi.
Maggisa ng bawang at sibuyas, ilagay ang tomato sauce at asukal, pakuluin.
Ilagay ang baguio beans at carrots, pakuluin ng 2 minuto. Magdagdag ng konting tubig or pinag-pakuluan tubig ng pork kung kinakailangan.
Ilagay ang patatas, saging na saba at pork and beans. Ilagay ang bell pepper at repolyo, pakuluin.
