Here’s a simple recipe of waffles you can make using your waffle maker with compote recipes below like like Blueberries, strawberry and mango-pineapple compote.

Waffle Recipe for Waffle Maker

INGREDIENTS:

  • 2 cups flour
  • ½ cup sugar
  • 1 cup milk (dry ingredients cup)
  • 1 cup water or less (dry ingredients cup)
  • 2 large eggs 
  • 100g butter or good quality margarine (melted)
  • ½ tsp salt
  • 1 tsp vanilla flavor (add a little more if you want it fragrant)
  • 1 ½ tsp baking powder
  • ½ tbsp white vinegar (optional)

INSTRUCTIONS:

  1. In a clean bowl, pour all the dry ingredients and whisk for a few seconds then add all the wet ingredients and gently fold till you get a smooth batter. Please note: Don’t add all water at once, remember flour absorbs water differently. You may need to adjust water accordingly.
  2. FOR WAFFLE MAKER: Brush your waffle maker with some butter, measure and pour your batter into the waffle maker, check it after a minute and 30 seconds.
  3. FOR PANCAKES: Place your non-stick pot on  low heat, scoop the batter with a deep spoon or use ½ measuring cup and fry each side for 1 minute… And your pancake is ready!

FOR WAFFLE FILLINGS:

Fruit Compote (Mango, Pineapple, Strawberry and Blueberry)

For the strawberry compote:

  • 2 cups strawberries quartered
  • 1 tbsp sweetener of your choice
  • 1 tsp lemon juice
  • 1 tsp vanilla extract

For the blueberry compote:

  • 2 cups blueberries used frozen
  • 1 tbsp sweetener of your choice
  • 1 tsp lemon juice

For the mango-pineapple compote:

  • 1 cup pineapple chopped
  • 1 cup mango chopped
  • 2 tbsp sweetener of your choice
  • 2 tsp lime juice

INSTRUCTIONS:

  1. To make the compote, simply place the fruit, sweetener and lemon/lime juice (and vanilla if you’re making the strawberry compote) in a saucepan and bring to a simmer. Simmer for 10-15 minutes or until the fruit has broken down and the compote has thickened slightly. Keep in mind that it will continue to thicken as it cools.
  2. Remove the compote from the heat and allow to cool.

Cooking Tips: Top it with fresh cubed of fruits like mango, apple, dragon fruit, kiwi or slices of banana. For other fillings, nutella, peanut butter, sugar syrup, or condensed milk.
