Chicken, Avocado and Mango Salad

This Chicken Avocado and Mango Salad is bursting with flavour thanks to the cajun seasoned chicken, creamy avocado, and sweet ripe mango slices. You can freely add more ingredients as you like, add some cucumber or even slices of onions too. But this recipe..is already perfect for me! Enjoy! Don’t have cajun seasoning, substitute it with any seasoning like, barbeque powder or garlic powder etc. Any spice available in your pantry will do..or you can replace it with roasted chicken bought from the store.

Chicken Avocado and Mango Salad

INGREDIENTS:

  • 1 pack 250g lettuce (curly)
  • 2 large ripe avocado, pitted and sliced/diced flesh 
  • 2 large ripe mangoes, sliced, diced or scoop flesh
  • 1 pack (200g) cherry tomatoes, sliced in halves 
  • 2 tablespoon parsley or cilantro, minced
  • For the Chicken: (you may Substitute with Fried/Baked Chicken Nuggets)
  • 2 pieces skinless, boneless chicken breast fillet, 
  • 2 teaspoons Cajun spiced seasoning
  • 2 tablespoons butter
  • Yogurt Dressing:
  • 2 tablespoon honey/sugar
  • 1 dash salt
  • 1 cup mango/plain greek yogurt
  • 4 tablespoons japanese mayonnaise

INSTRUCTIONS:

  1. For the Chicken Breast: Using a mullet, cover with cling wrap or plastic and pound the fillet to flatten the meat.
  2. Transfer the chicken on a plate and sprinkle it with Cajun, salt and pepper seasoning. Mix it well to coat and let it marinate for a few minutes.
  3. In a large pan over low heat, melt the butter and fry the chicken until cooked through or lightly browned on all sides (5 to 7 minutes).
  4. Assembly: Chop the curly lettuce and transfer into a large serving plate. Layer with slices of avocados, mangoes and cherry tomatoes. Top it with sliced chicken fillet and drizzle with the dressing on top. Garnish with minced parsley.
  5. For the Dressing: Make the salad dressing, combine yogurt, dash of salt, 2 tablespoon honey and 4 tablespoon mayonnaise. Mix it well and serve it chilled with the salad.
  6. Serve and enjoy!

I made another batch for Mother’s Day. It was gone too soon on the table…I love to make this over and over again! For this version, I don’t have chicken fillet… So why not use Fried/Baked Chicken Nuggets. Just the same…so yummy!
