Coconut Ice Cream with Jackfruit (No Mixer Needed)

Did you know you can make your own homemade Ice Cream even without a hand mixer machine or even if there is no Ice cream maker. Hurray.. this recipe and technique is adapted from Indonesia. Thinking of a food business that is fresh in the market or just want to sell something in the neighborhood.. try this recipe… uniquely delicious too!

Nowadays, Im skeptical to branded Ice cream because of the large demands and quantity they manufacture. Checking the label.. Who knows what’s in it.. when they use a lot of terms or scientific terms. With homemade you can guarantee yourself it’s really healthy..because you made it. Of Course you handpicked all the ingredients!

Coconut Ice Cream with Jackfruit

(No Mixer Needed)

INGREDIENTS:

  • 500ml Coconut Cream in can
  • ⅓ cup (75 gram) sugar
  • 1 stalk pandan leaf, cut
  • 1/2 teaspoon salt
  • 1/2 tablespoon cornstarch mix with 1 ½ tablespoons water
  • 100 grams jackfruits, cut cubes 

INSTRUCTIONS:

  1. Prepare a medium saucepan, mix in coconut cream, cornstarch, salt & sugar with pandan leaf. Boil the mixture in medium low heat and keep on stirring until it boils. Put aside to cool down.
  2. Once it has cooled down, add in chopped jackfruits and pour the ice cream mixture in a freezer safe tupperware. Chilled in a freezer.
  3. If you don’t have a hand mixer it’s totally fine, so, after chilling in a freezer for an hour, I use a spoon to stir the mixture just to combine. Breaks the ice forming if any.
  4. Repeat this stirring method after 1-2 hours for about 4-5 times.This technique is to make the ice cream mixture more creamy and form a nice ice cream texture.
  5. After ice cream is fully frozen, to serve, let it stand for a few minutes before scooping.

Serving coconut ice cream dessert: (Halo-halo style)

In a bowl, arrange nicely chopped jackfruits, avocado,strawberry or any desired fruits, sago pearls, durian flesh,a drizzle of condensed milk or chocolate condensed milk. And add in chocolate rice. Scoop coconut ice cream into the bowl and lastly sprinkle with chopped nuts on ice cream and serve.

For toppings, freely use any desired toppings that are available. 

The traditional Indonesian topping is usually the following:

  • Avocado
  • jackfruits 
  • coconut flesh
  • durian
  • sago pearl
  • jelly 
  • chocolate rice
  • chocolate condensed milk
  • Crushed nuts
