Chicken Shashlik (Grilled Chicken Kebabs)

INGREDIENTS:

  • 400g Chicken Breast fillet
  • 1 large white Onion
  • 1-2 Red bell Pepper
  • 1-2 Green bell Pepper
  • 1 Tbsp Ghee, melted (or melted butter)
  • For the Marinade:
  • 1 Tbsp Natural Yoghurt
  • 2 Tbsp Tomato Ketchup
  • 2 Tbsp Dark Soy Sauce
  • ½ Tbsp English Mustard
  • 1 Tsp Garam Masala
  • 1-2 Tsp Indian Kashmiri Red Chillies (substitute paprika + cayenne powder)
  • ½ Tsp Black Pepper
  • ½ Tsp Garlic Powder
  • ½ Tsp Onion powder
  • Others: 6 bamboo skewers

INSTRUCTIONS:

  1. Dice the chicken breast fillet for about 3 cm. Prepare the marinade and mix it all in the bowl with the diced chicken. Cover and let it stand in the fridge for an hour (up to 8 hours).
  2. Prior to actual grilling, soak the bamboo skewers in water.
  3. Evenly slice your vegetables. They can cook more consistently as a result. Prepare the veggies, onions, red and green peppers, and slice them into 3cm size (same size of your diced chicken).
  4. Skewer the chicken and vegetables onto the skewers alternating between meat and veggies. Then, brush the Kebabs with the melted ghee/butter/oil
  5. FOR GRILLING: Prior to placing your skewers on the grill to begin cooking, make sure it is properly preheated at medium heat.
  6. Brush the grill with oil, and preheat your grill until medium hot. Grill it for about 6-8 minutes on each side.
  7. Make sure to brush your Kebob with oil. This will prevent them from drying out too much.To ensure more consistent cooking, cook them over medium heat rather than high heat. For the greatest results, use a meat thermometer. Chicken is cooked when it reaches an internal temperature of 75°C.
  8. Serve hot and enjoy with your favorite BBQ sauce dippings.

FOR BROILING:

Aside from grilling, you may also broil this in the oven. Just separate the meat from the vegetables and use a foil for the veggies with little opening in the center. Broil the chicken for about 5 minutes and then remove the veggies. Flip the chicken Continue cooking for another 5 minutes.

FOR STOVE TOP GRILL:

Finally, a stovetop grill pan also works fantastically! The chicken has juicy grill marks and is tender. Whichever technique you choose, assembling this dish doesn’t take very long thanks to the easy to cook chicken breast fillet.
