This Fried Rice is so hot and spicy! You gotta try this Thai inspired fried rice recipe thats perfect for your breakfast. You can pair this to any of your favorite fried viand. It can be fried chicken, hotdogs, spam, beef tapa/jerk, or sausage etc. Happy cooking!
Thai Spicy Fried Rice
INGREDIENTS:
3 cups cooked jasmine rice day old leftover rice
1 cup shrimp, remove shells and deveined
A handful of Thai basil, minced (or any basil you have)
3 pcs red chili pepper finely chopped
4 cloves garlic
1 tablespoon vegetable oil
Sauce:
2 tablespoon oyster sauce
1 tablespoon fish sauce
½ tablespoon soy sauce
1 teaspoon sugar
Garnish:
3 fried sunny side up egg
6 slices of Cucumber
6 slices of Tomatoes
12 pcs Kropek, on the side
INSTRUCTIONS:
In a mortar and pestle (or food processor), pound (or pulse) red chili, and garlic until oils and juices release. Set aside.
In another bowl, stir to combine all the sauce ingredients. Set aside.
In a large wok, heat oil to saute garlic and red chilis. Add in shrimp and let it cook for a minute or two until slightly pink.
Toss in the rice and mix it well. Add in the sauce mixture and toss again until the rice are coated with sauce.
Add in fresh chopped basil and mix well. Turn off heat. Transfer into individual plates. Top off each plate with fried eggs. Garnish the side with kropek, sliced cucumber and tomatoes.
