Easy Pancit Bihon Recipe

Let’s make it easy and quick. This is an easy version of Pancit bihon you can quickly cook for breakfast or afternoon snack. Happy cooking and enjoy!

Easy Pancit Bihon Recipe

INSTRUCTIONS:

  • 250g pancit bihon or rice noodles
  • 1 tbsp garlic, minced
  • 1 medium size onion, sliced
  • 1 small carrot, julienned
  • ½ cup green beans, sliced in slant, remove threads on the side
  • 1 small red bell pepper, julienned
  • 200g cabbage, finely chopped
  • 500ml chicken broth (or use chicken broth cube)
  • 1 tsp atsuete or annatto powder, dissolve in 2-3 tbsp water
  • ⅓ cup soy sauce
  • 2 tbsp fish sauce
  • 150g pork belly, cut into bite size pieces
  • ¼ cup pork liver, chopped
  • ½ cup shrimp, peeled and deveined
  • 2-3 pcs fried kikiam, sliced (or fish balls)
  • 2 tbsp vegetable oil
  • freshly ground black pepper
  • salt to taste
  • 1 tbsp sesame oil

INSTRUCTIONS:

  1. Preparation for noodles: Soak the noodles in warm water for 10-15 minutes until al dente but not too soft, then drain and set aside. 
  2. In a wok, heat 2 tbsp of the oil in medium heat. Add the pork and stir fry to brown on all sides, followed by chopped liver. Continue to cook until cooked through.
  3. Push it aside, then saute the garlic and onion and shrimp until it begins to turn translucent.
  4. Add the bihon then pour in the broth, fish sauce, soy sauce, and atsuete mixture
  5. Cover with lid, simmer for a few minutes until done. Toss and mix it well together.
  6. Then lastly add the vegetables, fried kikiam and stir fry for another 2 minutes. Then season with ½ tsp of freshly ground pepper and salt.
  7. Lastly, drizzle with 1 tbsp sesame oil for that authentic flavor of Pancit bihon.
  8. Serve with fresh slice of lime or calamansi upon serving. Enjoy!
