Sweetfire Chicken ala Panda Express
INGREDIENTS:
- 1 tablespoon olive oil
- 1 red and green bell pepper, chopped
- 1 ½ cups diced fresh pineapple, (or canned)
- ½ cup Pantai Thai sweet chili sauce, adjust more if you like saucy
- 1-2 tsp Sriracha/hot sauce, optional spicy kick
- 2 green/spring onions, thinly sliced
- For the chicken:
- ½ cup vegetable oil
- 2 pcs chicken breasts fillet, diced (about ½ kg)
- 1 cup all-purpose flour (also best when cassava flour is used)
- 2 large eggs, beaten
- Salt and pepper, to taste
- 1 tablespoon sesame oil
INSTRUCTIONS:
- In a large pan, heat some vegetable oil over medium high heat.
- One by one, dredge chicken in flour, dip into eggs, then dredge in flour again. Pressed to coat it well.
- Fry the chicken in batches, and do not overcrowd the pan. Add chicken to the pan in 3-4 batch at a time. Let it cook until golden and crispy, about 2 minutes on each side.
- Transfer to a paper towel-lined plate. Set aside.
- For the Sauce: Heat olive oil in a large pan over medium high heat.
- Add bell peppers and pineapple to cook, stirring occasionally, until tender, about 1-2 minutes.
- Toss in crispy chicken and Thai sweet chili sauce and hot sauce (optional) until well combined, about 2 minutes. Season with salt and pepper to taste and drizzle with sesame oil.
- Turn off heat
- Transfer into a serving platter, garnished with chopped fresh herbs like spring onions. Enjoy!
