This salad is so yummy with a very simple vinaigrette dressing.. everyone will love this garden salad. Enjoy!
Shrimp Avocado and Mango Salad
INGREDIENTS:
15 pcs shrimp
1 bunch curly lettuce, chopped
4 pcs cherry tomatoes, halved
½ white onion, sliced thinly
1 medium Avocado, diced
1 medium Mango, diced
3 tbsp Olive oil, extra virgin
2 tbsp fresh Lemon juice
1 tbsp Honey
½ tsp Black pepper, freshly ground
Fresh Parsley, garnish
INSTRUCTIONS:
For the shrimp: clean, remove head, shells (leave the tails) and devein. Quickly fry in a pan with oil, season with salt and pepper to taste for about 2-3 minutes or until it curls. Do not over cook. Once done, remove from pan and let cool. Set aside.
In a large salad platter, line it with fresh lettuce, then start to layer the diced mangoes, avocados and onions. Top it with shrimp, sliced tomatoes and chopped parsley. Drizzle with extra virgin olive oil, lemon juice, honey, and black pepper.
