Eggplant Tofu ala Panda Express

I love this side dish “Eggplant Tofu” of Panda Express so I decided to make one at home. It came out perfect just like Panda Express version..Yummm! Just to note I bought my Korean tofu in the grocery fridge section (its available in Puregold or SM grocery).

Eggplant Tofu ala Panda Express

INGREDIENTS:

  • 1 eggplant, chopped
  • 550g Korean Soft Tofu (any tofu is ok..but this taste so good) or 1 large square
  • 1 red bell pepper, chopped square
  • 1 onion, chopped
  • 1 tbsp garlic
  • For the Sauce: (combine all in bowl)
  • 3 tablespoon soy sauce
  • 3 tablespoon oyster sauce
  • 1 tablespoon chinese cooking wine (rice wine)
  • 1 tsp sugar
  • ¼ teaspoon black pepper powder
  • ½ tsp Salt to taste (I used Badia Truffle Salt)

INSTRUCTIONS:

  1. Pat it dry with paper towels. Slice tofu into cubes and fry in a nonstick pan with little olive oil until slightly brown. Transfer into a plate set aside. 
  2. In the same pan, add the eggplants and fry until soft in the center or cook through about 3-5 minutes. 
  3. Push the eggplant aside, add oil if needed and saute onions, garlic, red bell pepper until wilted.
  4. Now add back the tofu and pour in sauce, toss them all together. Let it cook for a minute or two.
  5. Adjust taste as needed. Ready to serve!
