Din Tai Fung Style (Golden Shrimp Fried Rice)

If you love Chinese Style fried rice, this is how you achieve that yellow or golden hue Chinese fried rice – Din Tai Fung Style (Golden Shrimp Fried Rice). Best to go with Original Chicken Soup, Xiao Long Bao Dumplings and Stir-Fried Green Beans. Yummy!

Din Tai Fung Style (Golden Shrimp Fried Rice)

INGREDIENTS:

  • 1-2 cups small shrimp, de shell & de-veined You can use frozen prawns.
  • 2 yolks (beat evenly)
  • 4 eggs (beat evenly with a teaspoon of light soy sauce)
  • 4 cloves garlic minced
  • A stalk of spring onions (cut into rings)
  • 4 cups leftover refrigerated rice 
  • Cooking oil

INSTRUCTIONS:

  1. Season shrimp with ½ teaspoon salt and a dash of white pepper. Set aside for use later.
  2. Mix the beaten egg yolks into the overnight rice till even. Set aside.
  3. Heat up wok over high heat, add in 3 tablespoons of oil, add in the egg batter and fry it until cooked (texture to be similar to scramble eggs). Transfer into a plate and set aside. 
  4. In the same wok  over medium heat, add in 1 tablespoon of oil, sauté garlic and add in the rice and fried it for 2-3 minutes.
  5. Add the fried eggs into the rice and break up the eggs into small pieces using your spatula, continue to fry the rice evenly for another 5 minutes
  6. Season with salt and a dash of black pepper to taste. 
  7. Add in cut spring onions into the rice and continue frying till even for about 1 min. Turn off heat. Transfer rice into rice bowls to mould and dish out into 4 separate plates.
  8. Lastly, stir-fry the shrimp in the same wok until cooked. Divide the shrimp respectively on each plate of rice. Enjoy!
