Stuffed Baked Potatoes

Quick and easy recipe you can make for extra potatoes. Ideal for snack or as a side dish. Healthy, cheesy and buttery! Enjoy!

Stuffed Baked Potatoes

INGREDIENTS:

  • 3-4 medium boiled or baked potatoes, choose the best shape or the boat type.
  • 1/4 cup sour cream (or substitute plain yogurt or Greek yogurt)
  • 3 Tbsp butter
  • 2 Tbsp grated parmesan cheese
  • 1 chopped scallion
  • sprinkle of the following spices paprika, garlic salt, pepper, dill (dill or any favorite herbs)
  • 3/4 cup shredded cheese of choice

INSTRUCTIONS:

  1. Preheat oven to 200°C (or 400°F)
  2. Slice the potatoes on top, scoop out the flesh to make a shallow bowl, leaving enough flesh to hold the shape of the skin.
  3. Mash the flesh with the sour cream, butter, parmesan and scallion.
  4. Fill the skins with this mashed potato mixture.
  5. Place the potatoes in a lined baking sheet. Mix the spices together then sprinkle the spice mix over the potatoes. Top with some shredded cheese.
  6. Bake for about 15 minutes or until golden and bubbly.
  7. Serve and enjoy!
