Japanese Fruit Sandwich Recipe
INGREDIENTS:
4 slices Hokkaido Milk Bread/Shokupan (alternatively white bread or pullman bread)
8 oz (1 cup) heavy cream, chilled
1-2 tbsp sugar
Your choice of fruits:
6 whole large Strawberries, hulled ( or use other fruits like navel orange, Kiwi, Banana, Grapes)
INSTRUCTIONS:
Wash fruits and pat it dry. Remove stems or leaves and hull the strawberries. Peel the other fruits, if you’re choosing orange, kiwi or banana. Slice the orange in half after peeling.
Make the Whipped Cream: In a mixing bowl, add heavy cream and sugar. Beat on high speed until stiff peaks form.
Using a spatula, spread a thick layer of whipped cream around one slice of bread.
Then mount the whole fruit in the center horizontally. Start with placing 3-4 whole pieces of strawberries fruit in the center of the bread.
Just align it in one line, this fruit alignment is where you will slice the sandwich. Just like in the tic tac toe game. You can align it diagonally, vertically, or horizontally. This one is horizontal slicing (left to right) style. Or diagonal if you like a triangle style.
Once the fruit is aligned, add more whipped cream on top and in between the fruit.
Spread a thin cream on the 2nd bread. Then, place the second slice of bread on top to create a sandwich. Do the same for the remaining bread.
Wrap it in parchment paper, cling wrap or saran wrap to help keep its shape.
Mark your wrapper with a pen to remember where to cut it later. Just remember that the way you assemble the fruit will impact how it looks when you cut it!
Refrigerate your sandwich for at least 1 hour.
Once ready to serve, start slicing in the mark you made.
Serve it with halfway wrap on or remove the wrap. Enjoy!
Cooking Notes:
For whipping cream: Ideally you can place the mixing bowl with whipping cream under a bowl of ice, for faster whipping.
You can use any assorted fruits you like to combine. Like the photo below:
