650 grams tasty bread, remove the brown side (white pullman bread)
1 cup granulated sugar
3 eggs
1-2 tsp ube flavoring (all in one with color violet)
2 ½ cup milk
For the Dough:
3 ½ bread flour
60 grams melted butter
¼ cup granulated sugar
1 tablespoon sugar
1 pack dry yeast which is 8 grams
⅔ cup warm water
⅔ cup warm milk
egg white
INSTRUCTIONS:
Make the Pudding: In a pot cut the bread into small pieces. Add 2 ½ cups of milk, 1 cup of sugar and mix it well. Let the bread absorb the milk.
Once the bread is soaked in milk, add eggs one at a time and mix it well. Mash it altogether using a potato masher until smooth. Bring it to medium heat, stirring it well until the pudding becomes thick. Turn off heat.
Add the vanilla/ube flavoring. Mix well until even in color. Set it aside
Prepare the Dough: Prepare the yeast by adding it to your warm milk and the 1 tablespoon of sugar mix and let it sit for 5 minutes. Make sure milk and your water is warm and your fingers can touch it. It shouldn’t be hot because it can kill your yeast.
Combine all your dry ingredients together and mix well.
Use a stand mixer or combine your dough ingredients manually in a large bowl.
In q mixing bowl add all your wet ingredients using hook attachment and stir.
Add your dry ingredients gradually. Mix it over medium (#4) speed for about 8 to 10 minutes until the dough is elastic and smooth.
Knead your dough and form it like a ball.
Then rest it in a bowl with a small amount of oil, around 1 teaspoon and roll your dough. Cover it with plastic for an hour.
After an hour your dough will double in size.
On a flat table, sprinkle a small amount of flour in your work surface cut your dough in half
Roll your dough using a rolling pin, you can do 8 inches to 10 inches wide and12 inches long.
Add your filling in the middle about 2 inches wide.
Fold your dough side to side covering the center filling/pudding.
Turn it upside down and cut the 2 ends.
Cut it about an inch, transfer each on the baking tray, one inch apart from each other.
Prick your dough on top using a fork.
Brush your dough using egg white before placing it in the oven.
Preheat your oven 180°C (350°F) and bake it for about 18 to 20 minutes until golden on top.
Let it cool. Serve warm and enjoy!
Cooking Tips: Same recipe for Pan de Pula, but you will use vanilla instead of ube flavor, and use red gel food color.
