This salad is so yummy, light and fresh. Alternatively, you can mix the tuna salad first and serve it straight in avocado bowls. Just sliced up the flesh diagonally or criss cross so it is easy to scoop. Serve it on a bed of chopped lettuce leaves. Enjoy!
Tuna Avocado Salad
INGREDIENTS:
1 avocado, diced
1 cup tuna flakes in spring water, drained
1 Medium Tomato, diced
1 Large Onion, minced
2-3 tbsp Kewpie Mayonnaise
1 tbsp Lemon Juice
1 tbsp cilantro, minced (alternatively any fresh herbs like parsely)
¼ tsp Black Pepper
3 lettuce leaves
Salt to taste
2 avocadoes, sliced and serve as a mini bowls (optional)
INSTRUCTIONS:
In a bowl, add the avocado and the canned, drained tuna and mash with a fork.
Add the chopped tomato, onion, and cilantro along with the lemon juice, mayonnaise, and salt. Mix well
Place the salad in the refrigerator to chill.
Serve in a bowl of fresh avocado, sprinkle with diced tomatoes and chopped lettuce leaves on the side.
