Baked Avocado Egg Boats Recipe

Baked eggs in avocado with crispy bacon better known as Avocado Egg Boats.

This baked avocado and egg recipe, often known as a “egg stuffed avocado boat,” may soon become your new go-to breakfast item. And allow me to explain why. Eggs are fried in avocado in baked avocado egg boats, thus they are incredibly healthy. Thanks to the egg, they provide protein, healthy fats, and a significant amount of fiber in addition to being incredibly flavorful and delectable. Of course, the star of the show is FRESH AVOCADOS!

Baked Avocado Egg Boats

INGREDIENTS:

  • 2 ripe avocados, pitted and halved
  • 4 small eggs 
  • salt and pepper
  • 4 slices of bacon
  • Freshly chopped herbs like chives, for garnish

INSTRUCTIONS:

  1. Preheat the oven to 180°C (or 350°F). Place avocados in a baking sheet. In a bowl, start cracking the eggs. Spoon the yolk first in each avocado half, then pour in as much egg white as you can fit without spilling over.
  2. Then season with salt and pepper to taste. Bake until whites are set and yolks are no longer runny for about 20 minutes. (Cover with foil if avocados are beginning to brown.)
  3. Then cook the bacon in a pan over medium heat until crisp, about 8 minutes. Transfer to a plate lined with paper towels and chop.
  4. Top avocados with bacon and chives. Serve with a spoon and enjoy!
